The idea to start a home based allergen free bakery stemmed from a lifelong, milk protein allergy that I have lived with. Always having a passion for baking, dairy free treats became second nature. Having grown up with my cousin who I was inseparable with and her having a gluten allergy; allergies was something our families learned to accommodate. Our parents taking both of us out for a treat was a challenge at best. After my daughter was diagnosed this year with a milk protein allergy I was sad for her but not flustered having dealt with it myself I already knew the precautions and could easily make a life style adjustment for her. Her Birthday was a week away after she was diagnosed, I was working full time and could not find anyone in my area to make a gluten free dairy free Lilo and Stitch cake for her Birthday party and didn’t have the time to spend on it myself. I bought a cake and made gluten free dairy free cupcakes; watching her cry because she couldn’t have the Lilo cake like everyone else was heartbreaking. The cake is the centerpiece for any celebration, I’ve always made something separate for all my family and friends suffering with allergies only to have everyone else eat them and not realize.  Having suffered with an allergy my whole life and now seeing my daughter playing out the same scenario there is nothing more frustrating than going to a food establishment and having the employee’s ignorance to allergies make assumptions only to deal with a sick baby after while suffering myself.
